Red Ranchero Enchilada Sauce

Ingredients

  • 2 tablespoons lard

  • 2 tablespoons Ranchero

  • 2 tablespoons flour

  • 3 cloves garlic

  • 2 diced tomatoes (or 1 can of roasted tomatoes)

  • 1 large white onion

  • 1 medium yellow onion

  • 1 tablespoons Cumin

  • 2 cups beef broth

  • 2 cups chicken broth

  • Brown sugar to taste

  • Tomato paste to taste

  • Salt to taste

Directions

  1. Heat 2 tablespoons of lard in a medium-sized saucepan over medium heat.

  2. Add 2 tablespoons of Ranchero and 2 tablespoons of flour and stir until the mixture is clumped together.

  3. Dice 3 cloves of garlic, 2 tomatoes (or 1 can of roasted tomatoes), 1 large white onion, and 1 medium yellow onion, add and stir for a few minutes until the vegetables are soft.

  4. Add 1 tablespoon of cumin and stir.

  5. Add 2 cups of beef broth and 2 cups of chicken broth, and stir until combined.

  6. Bring the mixture to a simmer and cook until it is thickened to your desired consistency.

  7. Taste and adjust the seasoning with brown sugar, tomato paste, and salt as needed.

  8. If you'd like a smoother sauce, blend the mixture in a food processor or blender.

  9. Serve over your favorite enchiladas. Enjoy!
