Verde Enchilada Sauce

Ingredients

  • 3 tablespoons lard

  • 1 tablespoons Ranchero

  • 3 tablespoons flour

  • 4 cloves garlic

  • 2 poblanos

  • 2 serranos

  • 2 3oz jars of Hatch Green Chilies, Use fresh when available

  • 2 large white onion

  • 1 tablespoons Cumin

  • 1 Green Chili Stew (33oz)

  • 2 cups chicken broth

  • Brown sugar to taste

  • Salt to taste

Directions

  1. In a large pot or Dutch oven, heat the lard over medium-high heat. Once hot, add the Ranchero and flour and whisk together until the flour is completely incorporated.

  2. Add the garlic, poblanos, serranos, Hatch Green Chilies, and onions. Sauté for about 5 minutes, stirring occasionally, until the vegetables are softened.

  3. Add the cumin and stir to combine.

  4. Pour in the Green Chili Stew and chicken broth and bring to a boil.

  5. Reduce the heat to a simmer and let cook for about 30 minutes, stirring occasionally.

  6. Taste the sauce and add brown sugar and salt to taste.

  7. Once the sauce is finished, use it to make your favorite enchiladas or other dishes. Enjoy!
